On the days I’m working from home I love to make crazy salad creations–throwing any veggie and fruit combinations together. My concoctions can be hit or miss but I now have a few standards that I make on the regular which have me looking forward to this mid-day meal more than I ever used to. My latest afternoon nosh = kale, orange, and avocado. (Always avocado, obviously!)
Two of my favorite flavor additions include: green onions and cilantro. Did you know cilantro has super cleansing benefits–google it! I love the taste so I add cilantro in a lot of my salads / dishes.
Dressed with avocado oil and a hint of himalayan pink salt. So refreshing and satisfying!
Also, since I’m always looking for simple, quick and healthy meals, I made red quinoa and zucchini frittata muffins (a super simple recipe I snagged from one of my favorite cook books) to eat throughout the week.
I’m a firm believer in pulling out the pretty plates and flatware (makes lunchin’ at home a bit more enjoyable).
