We’ve been grilling our way through the summer–and while my guy is usually the one flipping the meat, this past week my girlfriends and I grilled all on our own. Because real girls grill too! I had been wanting to experiment with a variety of veggies and fruits and so as soon as T told me he would be traveling for work I quickly rounded up my ladies. Between the rosemary and lemon seasoned salmon, grilled romaine, broccoli, peaches, (the list goes on!)… I couldn’t even tell you what was the best part of this meal. I’m literally still dreaming of this feast and plan to recreate a similar grilled assortment for Labor Day. We made way too much food for just the four of us, but it also made for amazing leftovers the next day. Oh and let’s not forget about the fresh figs on top of toasted almond gelato for dessert. I was in heaven (and baby boy was too!).
Everyone brought over their own main dish and a veggie / fruit option to grill. This made it fun to experiment and try a bunch of things.
We kept everything super simple–just a healthy dose of Cobram Estate olive oil (a yummy new local find), sea salt and pepper. And for the grilled romaine, my girlfriend Stephanie whipped up a homemade caesar dressing to top.
Tip | Boil the romaine and broccoli first before grilling so they’re cooked through. Then just throw on the bbq for a few minutes to char them.
I picked up a few flavors of Talenti Gelato but the Toasted Almond ended up being the winner of the evening. A new favorite for this girl!
