Easy Kid-Friendly Recipe | Yogurt Popsicles

 A few 80 degree days has meant yogurt popsicles and swim trunks (and bellies out!).  Unfortunately my belly too, I wasn’t quite ready for that but I had a bachelorette pool party again this past weekend in Napa.  At least those ghostly pale legs are getting some color!!

Last summer I froze a lot of leftover smoothies and made them into popsicles and more recently I’ve been experimenting with a simple yogurt popsicle.  Mainly as a cool afternoon snack for Rex but I’m of course all about it too.  It’s been hitting the spot when we’re hanging in the backyard, and is a nice guilt-free frozen treat.  A super simple recipe below that you can alter and doctor-up in so many ways.  You can add sliced fruit, honey to sweeten, granola for a crunch… whatever you’re craving.  These were made with greek yogurt so they’re on the tangy side but use your yogurt of choice.  Feels like summer!

Easy Kid-Friendly Recipe | Yogurt Popsicles

Marysia Swim sent over the cutest swim trunks for Rex!  They’re already getting a little snug on him so we’ll have to size up again soon!  Her whole “Bumby” baby swim suit collection is adorable–some really sweet and simple trunk styles for the boys which I love!  And currently crushing on this style for myself.

Ingredients –
2 cups of plain greek yogurt
4 tbsp of milk of choice
Options to customize ::
– 2 tbsp of honey mixed in the yogurt
– fresh cut berries to layer with
– granola to layer with
– you could even use a flavored greek yogurt if you like!

Directions –
1. in a small bowl, add the greek yogurt and milk. mix to combine until smooth. *recipe note – you can use plain non-greek yogurt as well, you just don’t need to add milk to smooth it out.
2. set up your popsicle molds and fill each mold about a 1/4 of the way up with the yogurt. if you’re using cut fruits or granola, add some pieces here and then cover with yogurt. continue to layer until you have filled the mold.
3. set the pops with popsicle sticks, and let sit in the freezer overnight. serve cold. enjoy!
